I love making a good veggie full English breakfast. To add a bit of variety I’m always mixing in different spices with my mushrooms, baked beans or just trying to put a spin on my meal! Go on try it today it is SO easy!
One of the most popular breakfast twists in Indian households is to spice up baked beans! It’s so easy and quick and you can then use the beans with toast, in a toastie, on a jacket potato- or whatever you like!
1 can baked beans (I use Heinz)
1 tbsp cooking oil
1 x Red onion
2or 3 Garlic cloves pressed
1 heaped tsp chilli powder (alter to taste)
2 green chillies beat with pestle and mortar (alter to taste)
1/4 tsp turmeric powder
1 tsp ground cumin
1 tsp fresh and finely chopped coriander leaves
1 tbsp Heinz ketchup
1tbsp dark soy sauce
Heat oil in a pan, and when hot add in onions and fry until translucent. Add in garlic and stir quickly so it doesn’t burn- keep on medium heat.
Add in the beans, and add chilli powder, ground cumin, turmeric powder, green chillies and salt. I sometimes add a squirt of soy sauce and some ketchup for a bit of tang- but it’s completely optional.
Once heated and ready to serve I add in the coriander leaves and stir.
